A cup of aromatic coffee, a subtle shade of jasmine and extremely pure taste, the notes of dried cherries, amaretto, and wild berries, and a pleasantly sweet aftertaste after each sip. This is a beverage from Ethiopia Gorbota. The farmers grow this coffee on the high-altitude plantations of Gerbota Suka in the Yirgacheffe region. Carefully selected beans with subtle floral aromas are the feature of Ethiopian coffee.
Yirgacheffe literary means “Land of many springs” ― there are many springs in this part of the Ethiopian Highlands. Here, the climate is optimal for growing coffee: it is mild and humid with an average annual temperature of 18°C, and sufficient precipitation in summer. Coffee trees in this region are a natural mixture of relic varieties, with large berries ripening gradually, not simultaneously. For this reason, the farmers harvest coffee cherries by hand and select only ripe berries on a branch.
Yirgacheffe combines an ideal topography, altitude, and enough water sources to produce and process the best Ethiopian Arabica. Small farms are often the property of several generations of the same family. They grow and harvest coffee cherries and then sell them to central washing stations. For the first time, they began washing coffee in Ethiopia in 1970. Before, it was subject to dry processing: they had been drying berries under the sun for three weeks and then removed the dried pulp from the bean. The first wet coffee processing point in Ethiopia was in Yirgacheffe.
Specialized centers are sorting, washing, purifying, and fermenting coffee. The flavor characteristics of the future beverage depend on the accuracy of each procedure ― the processing method is important to get the exact bright fruity and floral aroma of Ethiopian coffee.
